I'm wondering if I can turn off my iPhone and leave it at home while taking just my Apple Watch. If I've disabled location sharing on my watch, will anyone be able to track my location when I'm out and about with only the watch?

Nope, as long as you haven't shared your location from your Apple Watch, no one will be able to track you while you're out. If you shared your location from your iPhone, people might see that it's at home, but they won't see where your watch is. If you're really concerned, just turn off location sharing altogether!
It really hinges on the device settings for location sharing. Make sure to check which device is set to share your location in your Privacy settings. Also, if you use Family Sharing or a common Apple ID, your family members might still be able to see your watch's location through the Find My app if that's turned on.
Be cautious with the Find My network! While normally you can't be tracked if your devices are off, there's a slim chance you might show up if you're near other devices.
