I've been sending iMessages to a friend who has their iPhone turned off. It's been a couple of hours and I'm worried they'll see all the messages I sent while their phone was dead. I toggled off iMessage and SMS, and turned on airplane mode but kept Wi-Fi on. If their phone powers back on, will those messages still get delivered, or are they held somewhere because I disabled messaging settings? I just really need them not to see what I sent since I feel like I sounded a bit crazy!

Once you send an iMessage, it'll sit with Apple until the recipient can receive it. So unless you delete your account or find a way to unsend them (which is kinda unclear how it works), those messages will be delivered as soon as their phone turns back on. You might want to think of some excuses in advance!
There's honestly nothing you can do now. iMessages are stored in the cloud and wait for the device to come online. They can be delivered to any Apple device linked to their account, including Macs and iPads. If they don’t connect within 7 days, Apple will drop the messages, but until then, they're just sitting there!
Yeah, it's too late! Those messages will be delivered once their phone has power and signal. If you really want to stop it, you might as well toss their phone into the ocean, then they won't see them at all!
Why not just visit them before they turn their phone back on? You can ‘borrow’ their phone and delete the messages you sent!
