There's no BIOS password, so I can access the BIOS without any trouble. I'm wondering if I can just do a fresh Windows install or a full system reset to remove it from the company MDM. Is the management tied deeper to the hardware, meaning it might re-enroll after reinstalling Windows?

It really depends on the MDM software. Most of them link to hardware IDs, especially the motherboard, so if you just reinstall Windows, it might not help. You could consider trying a different OS, like Linux, to avoid the issue.
Honestly, it's best to reach out to your former employer to have them remove the MDM properly. If it's truly yours, they shouldn't have a problem with it.
There's a chance that the MDM entry was deleted but your laptop just didn't get wiped. It could just end up being a paperweight until you can log back into the company system.
If the device is locked by MDM, a clean reinstall won’t work. As soon as it connects to the internet, it will just re-enroll. You'll need to go back to the company for help.
There are two scenarios: 1) Your laptop isn't actually enrolled in the MDM, and in that case, you're good. 2) It is enrolled and you'll need to get in touch with your old employer to have it removed.
