I ended up purchasing DDR5-6400 CL36 RAM because it was significantly cheaper at $124 compared to $220 and $188 for the 6000 CL30/36 options. Am I getting a better deal with the 6400 CL36 RAM? I've heard that while higher MHz speeds can potentially lead to stability issues in a system, I also have the option to set the EXPO profile to 6000. Is that a wise choice?

As others have mentioned, you'll be fine. For AMD systems, 6000 is considered the sweet spot right now, and the latency you're looking at is nothing to stress about. If you want, you can tweak the settings in BIOS, but the RAM should run perfectly at its rated speed.
