I'm currently using an NZXT C850 PSU, which only has three 6+2 PCIe cables, all connected to my GPU. The iCUE Link Hub also requires a 6-pin PCIe power cable, and I just don't have a spare one. Can I safely take a PCIe cable from my old Corsair power supply and connect it to my NZXT PSU, or should I consider buying a SATA to PCIe adapter instead?

It's generally not a good idea to mix cables from different power supplies, as it can lead to serious damage. You should check if you're using both CPU 8-pin connectors on your motherboard; if you're running a 9800X3D, you might not need both unless you're planning to overclock. You could use one of those instead for the hub.
I'm actually using the same CPU on a Gigabyte X870 and I'm undervolting, not overclocking. Would switching a CPU cable for the PCIe even work?
