I'm currently using Comcast with internet speeds between 2.2 to 2.4 Gbps in my small apartment. I have two gaming PCs, two Xbox consoles, a TV (which I stream on since I don't have cable), and three phones. Generally, we're mainly on the PCs, with maybe one console or TV going at the same time. Even though I haven't faced any issues with my current plan, the price has increased from $85 to $115, even with discounts for autopay and paperless billing. AT&T is offering a 1 Gbps fiber optic plan in my area for about $37 a month after penalties for canceling Comcast. I'm wondering if 1 Gbps would be sufficient for my current usage, or would I run into problems?

Yes, 1 Gbps is more than enough for your needs. If AT&T has other lower plans available, they might also suffice since your current setup likely doesn’t require more than that. Remember, it’s the speed delivered to your devices that matters, not just the plan speed.
