I've been using Mint for a while and want to try other Linux distros that feature the KDE desktop. I've tested out Kubuntu and Debian, but they didn't go well for me. I'm hesitant about using Arch-based distros since there might be times when I won't power on my PC for months. Is it really a problem if I don't do updates frequently on a rolling release distribution?

Try using the distro selection resources available. Just remember to back up often, play with things in a virtual machine, and don't execute any command unless you're sure of it. Also, if you're looking for a more stable experience, maybe consider other distros that don’t rely heavily on internet for updates.
You don't have to worry too much about a rolling release. If you skip updates for a few months, nothing catastrophic should happen. Just be prepared that updating with `pacman -Syu` might take a while, but that's about it!
I love openSUSE Tumbleweed! I've got it on a laptop that I only use occasionally—about 2 or 3 times a year. I've never ran into issues with updates; everything works smoothly. Plus, it has Snapper, so if something does break, I can easily roll it back. If you're looking for an Arch-based option, you might want to check out CachyOS. I have it installed on a secondary drive, and it updated fine the last time I used it—it's user-friendly!
