- Motherboard: Asus TUF Gamer

The seller is asking for $560, but I'm currently waiting to hear back about how long it's been used. What do you think?

Honestly, terrible price for what you're getting. You could build a better machine for not much more. I recently got a system with 16GB RAM and a larger SSD for about $400, though it doesn’t have the 2070 Super.
I wouldn't pay $560 for that setup. It's a pretty old build considering the CPU and GPU are around 5-7 years old. I'd say it should be closer to $300 max. The PSU is solid, but the storage isn't an SSD, and that makes a difference in performance.
I mean, if it were free, I'd consider it, but I wouldn’t spend money on that setup. It's definitely too old for $560.
$560 is definitely overpriced, man. You're better off looking for something newer unless you want to throw your cash away.
At that price point, you should expect something a bit more current. For around $600, you can snag a PC with a Ryzen 5500/5600 and RX 6600, which would give you way better performance for gaming.
