I've been searching for up-to-date opinions on using BTRFS, but most of what I find is outdated info about past issues. I'm considering running an Ubuntu server on a RAID1 NVMe setup with BTRFS. Will this configuration work smoothly?

You'll be good to go! In my experience, our installer has worked with lvm+ext4, ZFS, and BTRFS root filesystems, all without issues.
We did hit a snag recently with BTRFS snapshots. Someone forgot to delete an old snapshot before an OS upgrade, which filled up the disk. Just a heads-up that BTRFS snapshots won't show up in the disk usage reports, so be careful with that!
