Additionally, I need a solution that can perform full (bare metal) backups of the host machine as well. Does TrueNAS fit the bill, or does anyone have other suggestions for reliable open-source tools?

Just a thought—do you really need to back up the host machine? If it's just acting as a hypervisor, you might be better off keeping installation media handy and just exporting the individual VMs to a safe location.
