2. I picked an SFX PSU, thinking it might be useful if I ever decide to switch to an ITX build, although that's looking less likely now.

I think you're overspending on that MSI X870E motherboard. For your build, especially with the components you've chosen, you might not need something that high-end. Consider dropping down to a more budget-friendly option that still offers good features.
