I recently purchased an iPhone 17 and I've heard it's best to maintain the battery level between 20-80%. I've been following this advice and my phone hasn't died on me yet. However, I've also read that I should let the battery drain completely and then charge it to 100% for calibration. What's the best approach for a new phone like this?

That old method of draining the battery completely was necessary with older battery types, but it’s not a concern with the current models. Apple hasn’t used NiCd batteries in ages. You're good just keeping it charged!
Honestly, there's no need to let your iPhone 17 die before charging it. Modern smartphones, including the iPhone, are designed with lithium-ion batteries that don’t require that kind of calibration anymore. Just stick with the 20-80% range you've been following!
