I'm looking for recommendations on apps that can record the screen on both iPhone and Android for creating tutorials. I've run into a situation where the screen changes too quickly to grab screenshots effectively, so I think a software solution that can run in the background while I demonstrate a process would be ideal. Bonus points if the app can highlight taps on the screen too! Since some of these apps might be invasive, I'd prefer to hear opinions rather than just checking out app store reviews.

On Android, I've had really good experiences with XRecorder. It's straightforward and does the job well! Plus, it doesn't have a lot of bloat.
For Android devices, especially Samsung, there's a built-in screen recorder that records audio and highlights touches. You can find it in the quick settings. I believe iPhones have a similar feature.
