I just got my hands on a 5070 Ti graphics card and I'm using an MSI A1000G PCIe5 power supply. It came with a PCIe 5.0 12+4 pin connector, but I'm a bit confused about what cables I actually need to avoid any safety issues. I tried searching online, but I couldn't find clear answers, so I'm hoping someone here can help me out.

Just use the cable that came with your power supply. There's no need for the adapter that came with your GPU. It should work fine!
But my PSU only came with two cables! I had been using a 3060 before, so I wasn’t sure if that would be enough.
