I'm looking to upgrade my GPU from the 2060 Super and I want something that will keep me future-proof, especially in terms of VRAM. I'd like to play at 1440p with 100fps or more. I don't play extremely demanding games, but I might in the future. I'm considering options like the 5060 Ti with 16GB, the 5070, 9060 XT, and the 9070 XT. The 9070 XT is a bit beyond my budget, but I'm open to alternatives. I've noticed that the 5070 Ti is priced about $200-$400 more than the 9070 XT, which is already stretching my budget.

I’d say just go for the 5070. It comes with DLSS and improved ray tracing performance, so you can stick with the software you already know from your 2060 Super.
What about the 7600 XT? It could be a good option to consider too.
