I currently have an RTX 3070 with 8GB and a Ryzen 7 9700x, but I'm frustrated with low FPS in certain AAA games. For instance, I'm only getting 40 FPS in Assassin's Creed Shadows even when I set everything to turbo low, and I'm not interested in using Frame Generation. I'd prefer an Nvidia GPU due to DLSS, but I'm open to AMD options if they have something comparable. What do you suggest?

The standard go-tos like the 5070 Ti and 9070XT are indeed great options. However, consider your budget and power supply. Aiming for 100+ FPS in 1440p for AAA titles will dictate your choices. A 5080 will give you extra performance but check your budget first.
If you're looking for the best, the RTX 5090 is a powerhouse. For value, consider the AMD 9070XT or 9070 non-XT. If you're after a premium option, the 5070 Ti is solid. If you want better performance but at diminishing returns, the 5080 is also an option.
Many people are suggesting the 5070 Ti or 9070XT. If you're looking for alternatives, a regular 5070 is also okay. I have the 5070, and I'm happy with the performance, but the Ti version will be better for future-proofing with VRAM.
It’s wild if your 3070 is only getting 40 fps in Assassin's Creed. That game is indeed demanding, but if you're tuned down to low settings, it should perform better. Definitely consider upgrading to one of those options mentioned!
I'd recommend the 5070 Ti or the 9070 series as well. I have a 5600x with a 6750XT, and I typically hit over 100 fps on medium settings in Borderlands 4 with some frame generation help. For long-term use, I'm planning to upgrade to AM5 and a 9070XT as they should last longer.
