We've opted for Windows Server 2022 for now, but be cautious—it's best to do the migration in steps: upgrade from 2012 to 2016, then to 2019, and finally to 2022. I ran into issues before where the in-place upgrade caused some servers to break, so definitely have a backup plan ready. And avoid migrating an Active Directory server!
Don't forget to check if the applications you rely on are stable with the new OS. Always consult with the vendor and ensure thorough testing before going live!
