I'm trying to decide between the 5060 with 8GB of VRAM and the 9060 XT also with 8GB. Unfortunately, I can't find a 16GB version of the 9060 XT available anywhere, and I'm also looking for alternatives for a decent GPU. What should I do?

You should really look for GPUs with more than 8GB of VRAM, especially if you're planning to use the card for a longer time. It could really pay off down the line.
