I'm on the hunt for an easy-to-use audio recording device that records good quality sound. I'm envisioning something where you just push a button to start recording, let go to save, and it automatically stores the clip. The ideal setup would only have a single button with no extra controls, as I'm going to be recording consensual audio messages at a party. I don't want anyone to be able to delete or edit anything from the device. Does such a device exist? Do I need to combine a couple of devices or carry a secondary controller? I'd appreciate any recommendations or thoughts you might have—thanks in advance!

You might want to check out devices from Tascam and Zoom. They have some models that fit your needs, with options for stereo and multitrack recording. Some also come with built-in microphones, which could be handy!
Digital voice recorders could be a good fit, although most have extra buttons alongside the record function. They’re typically marketed for business use, like recording meetings, but should let you start and stop recording quickly.
Have you thought about using your mobile phone? There are tons of recording apps that can give you the one-button functionality you're looking for.

Yeah, I considered my phone, but I worry about deleting things by mistake!
