I'm considering upgrading my GPU from an RX 5700 His IceQ to the 5060 or perhaps a better one. My current setup includes an Intel Ultra 7 265K processor and 32GB of 7600MHz DDR5 RAM with the RX 5700. I'm also planning to get a monitor, either 24" or 27" with a refresh rate of over 180Hz. What should I do? Should I go ahead and get the 5060 now, or would it be wiser to wait a few months in hopes of better prices or options?

Avoid any 8GB card at all costs. If you're not going for the 5070, consider AMD or Intel cards with 12GB or more. The 5060 Ti with 16GB might be getting discontinued soon, so if you're going to buy, today’s the day!
